Know what else Erin is the queen of? Mac & cheese! This girl knows her macaroni and cheese. So, when I made this the other day I knew I had to post this so she could be the judge. Or any of you, for that matter! This stuff is gooood!
What you need:
2 c elbow macaroni
1/4 c margarine, divided
2 tbsp all-purpose flour
1 1/2 c milk
1 tsp salt
2 tsp pepper
1 tsp Worcestershire sauce
1 tsp prepared yellow mustard
1 c shredded sharp cheddar cheese
1 c shredded mild/medium cheddar cheese
1/4 c Parmesan cheese
For the topping:
1/2 c shredded cheddar cheese
1/8 c Parmesan cheese
1/2 c panko crumbs
Preheat 350 F.
Grease a glass baking dish.
Cook the pasta (duhh!). Once it's finished, drain the water and mix in half of the margarine to keep the noodles from sticking together.
In a saucepan, stir together the flour and milk and bring to a simmer. Stir frequently. Then add the salt and pepper, Worcestershire sauce, mustard, 2 cups of cheddar cheese, and 1/4 cup of Parmesan cheese. Keep stirring this mixture until the cheeses are melted and the sauce is smooth. Stir the macaroni into this sauce until evenly covered. Pour the pasta into the baking dish.
In a small bowl, toss the remaining cheddar and Parmesan cheeses with the bread crumbs. Sprinkle this mixture over the pasta.
Bake for 30 minutes.
